Ok, So I just found this new recipe that I absolutely LOVE! I'm blogging about it, I haven't blogged in almost a year. I think that is saying something. So try it!!
It is borderline healthy... and when I say this I mean the actual recipe is healthy, however the way I made it probably not quite as much, I used whole milk instead of 1%, and a little... ok ok, A LOT more mozzarella than the recipe called for... Oh and then I ate 2 large plates full... Don't judge me. Recipe below!
Ingredients:
1.5 lbs Chicken Breast Tenders (I just used fresh chicken breast)
1 Cup Plain Bread Crumbs
1/4 Cup Grated Parmesan Cheese
1 tsp Garlic Salt 1/2 tsp Garlic Powder
1/4 tsp Black Pepper
1 Egg
1/4 Cup Milk 1% (or whole if you like to be cool and/or fatter)
2 tbs Extra Virgin Olive Oil
1 Jar Spaghetti Sauce (I use/recommend marinara sauce)
1lb Ziti
1/2 Cup Parmesan (Yes, more Parmesan)
1 Cup Part Skim Mozzarella (or fat mozzarella :D)
Directions:
Mix bread crumbs, parmesan cheese (1/4 cup), garlic salt, garlic powder, and pepper. In a small bowl mix egg and milk. Cut chicken into 1.5 inch cubes. Dip chicken in egg/milk mixture, and then roll in bread crumb mixture.
Heat Olive oil over medium heat. Pan fry chicken pieces until browned, approx. 4 minutes on both sides. While chicken is cooking, prepare ziti per package directions until al dente (or not). When chicken is done, remove from heat and let sit on paper towel. When ziti is done cooking, drain and pour into greased (pam) 9x14 pan. Pour Spaghetti/Marinara sauce over pasta, and sprinkle with 1/2 cup parmesan cheese (there it is!)
Arrange chicken in single layer over pasta. Sprinkle (dump!) mozzarella cheese over chicken, and bake at 350 for 25 minutes or until heated through and cheese melted.
Makes 8 servings (for elves, for normal fat people like Bo and I... it will be more like 4)
